Hojicha is made with mature leaves and stalks that are steamed, rolled, dried then roasted. Roasting changes the colour of the leaf from green to brown, transforms the flavour and radically reduces the caffeine content. This tea undergoes an extra step when it is ground into a powder.
You can be creative with Powdered Hojicha: whisk it in hot water to enjoy like traditional matcha, or add warm milk (naturally sweet milks like dairy or oat work best) afterwards to create a Hojicha latte. Use it in baking or mixed with hot water then drizzled over fruit/granola and yoghurt or dessert.
