Matcha - Spring 2025 harvest
First class grade
Organic
Green tea, Japan
Flavour: savoury, nutty, marine
This first-class, 2025 Spring harvest matcha is a blend of first-flush leaves from gardens in Kirishima, Satsuma and Shibushi in Kagoshima, southern Japan.
'First-class' grade is also known as 'Ceremonial' grade.
This matcha has a thick mouthfeel and notes of cooked green vegetables and walnut followed by a hint of seaweed in the tail.
Kagoshima's prevalent fog acts as a natural curtain to block sunlight from the tea plants. The plants are also shaded with cloth before harvest. Shading from the sun intensifies the chlorophyll content, the tea’s ‘umami’ flavour, and the amino acid L-theanine.
After harvest, the leaves are steamed, their veins and stems removed, and they are then dried before being stone-ground into a fine powder.
Certified Organic by Kagoshima Organic Agriculture Association (KOAA).
