Tangerine Ripe Puerh 
Dark tea, China

Tangerine, mushroom, damp earth, leather  
These leaves have been rapidly fermented with moisture and high humidity, pressed into a tangerine rind, then dried in the sun for a week. The result is a beautiful earthy, leathery puerh tea with a citrus flavour twist. You can either scoop the leaves out and steep alone, or break off some of the rind to infuse with the leaves for a more citrusy flavour.

It is a ritual with all dark teas to rinse the leaves (a 5 second steep) to ‘wake them up’ before you steep them, so make sure you get the best flavour out of the tea.

Preparation: Rinse, then steep for 2 minutes at 95°. Six + infusions. 

Food pairing: This tea works incredibly well with a cheese board. Here's one we love with it:

Goats cheese board ~ paired with Tangerine puerh tea
~ Goats gouda or camembert (we have tried it with both Over the Moon goats       Gouda and Opiki Ma Goats camembert)
~ Wafer crackers
~ Almonds and/or pistachios
~ Honey comb or a drizzle of honey
~ Slices of ripe pear
